Ok cool. So if a Pokemon can't take anymore of a wing then that corresponding stat has been maxed out?
Yup! Just remember that depending on what pokemon you've killed and how many times you killed that pokemon will determine that alone. By giving it a wing after killing a specific bunch tells you that
that particular EV has reached its limit (i.e.
"It won't have any effect"), or, your pokemon will accept it which tells you haven't quite completed the training

But don't let people tell you what to kill. Just look up a list online for a list of ALL pokemon that give you certain EVs when you kill them. Trust me, examples are Patrats, Lillipups, and Pidoves. They ARE NOT the only pokemon you have to kill for Attack EVs. Every pokemon fulfills in something.
For example (and I don't know why no one mentions this) you can got surf left of route 1 and there will be double grass with watchog and herdier and scraggy (I know herdier gives 2, but watchog might give 1, still not sure as serebii says 1 but bulbapedia says 2)
